Whistler Farmers Markets – My Highlights

Love Farmers Markets all over the world, and Whistler’s got it’s own charming version that feels more local than touristy. Vendors from around town produce goods made with love, and wanting to make some extra cash for their efforts. It’s not exactly the cheapest goods around town, but if you want unique and high quality this is it. This goes from food, jewellery, art, photography (the most hectic nature/animal photography I’ve seen is in one of these stalls).

Out of the 35+ stands, there’s a lot of gimmicks and stuff that do not interest me, but my favourite food-related ones are the following:

 This, my friends, is the REAL mystery box. for $30 a week, you get a box full of fresh vegetables and herbs from Pemberton (An hour north from Whistler, famous for the vegetables, especially their potatoes). You’re not sure what you get, just whatever is growing that week – I call that real sustainability and use of local produce! I hope there’s some wild mushrooms this week; I’ve picked the life out of all the spots I know.

PureBread, Whistler

I’ve got to be honest, most of the dining in Whistler is pretty dismal (compared to Sydney standards). Very few of the fine dining restaurants meet expectations, and there’s whole load of average pizzas, hot dogs, burgers and eggs benedict. But there are a few gems I will share over time; the most beautiful and captivating of this gems, for me is this place.

Located a 5 minute drive away from Whistler Village, and this artesian, modern bakery (the only joint in Whistler that uses an ipad as a cashier) has possibly the best bread I’ve ever tasted. It’s only a small place open from Wednesday to Saturday, and the good stuff goes quick!

Get there before 10 because you MUST try their Cheddar Jalepeno Scones, baguettes are ready by 12pm FRESH out of the oven just in time for your your lunch, the “carrot cake” is in ‘biscuit’ form too; you can see the julienned carrot, chunks of pecans and walnuts, balanced with all that gingery, cinnamon goodness, the hazelnut and chocolate brioche… And the BEST (hands down) feta and spinach croissant I have ever tasted; smack bang full of flavour, with a twist of pine nuts and sesame seeds.

Signature Dishes

Planning to start my own joint before I hit 30, and even though I’ve only been a chef for a bit over 4 years, I’ve developed my own style of cooking – my head is messed up with both Asian and French techniques and ingredients and I find it very hard to separate the two, as shown in two dishes that I’ve created so far (but still perfecting):

Duck, Cabbage and Shiitake mushroom wontons fried in Duck Fat, roasted duck skin, Sriracha and lime mayonnaise – Eat about 30 of these during a world cup match + good jap beer ftw

Kobe wagyu sirloin, grilled king oyster mushrooms, ginger and shallot pound, Chilli and Sichuan pepper beurre blanc; side of lightly pickled celeriac, carrot, radish slaw – Sounds like a mouthful, but it’s all about subtlety and balance and really letting the sexy, crazy fatty but melt in your mouth goodness of 9+ wagyu do all the talking.

…make friends with the butcher/fishmonger (or at least work in a restaurant so you can order from the wholesalers);

Black Angus rib eye on the bone; dry aged for 4 weeks, marble score 3. Decided to cut it into 4 steaks and cook it differently – some slow roasted (finished on the bbq), some straight on the grill…

Food Crawl!!

A couple of days off can only mean one thing: Food Crawl!! Load your wallet, wear elastic-wasited dress jeans, make sure the SLR memory card is empty and mates that have conversation that won’t end in awkward silence after prolonged exposure (and can handle their wine).


Let’s start with @ Manta Restaurant with mixed oysters; Clare De Lune, Bateman’s Bay; Coffin Bay Pacifics; Sydney Rocks from forgotten location. Nothing beats a freshly shucked oyster… Except 3 different kinds of freshly shucked oysters.

House-made fries with black truffle, parmegianno regianno – ohh, the sexiness.

A whopping 1.5kg 5+ Wagyu rib eye on the bone w/ bone marrow and field mushrooms

Steamed blood orange pudding w/ lemon curd ice cream – needed something light after all that heaby meatness and truffleness.

Next, it’s off the a fellow chef’s house for more steak…

…with roasted veg, “Chef’s Salad” (Beetroot, green beans, honey-glazed carrots) and of course cafe de paris!

Then for 2nd dinner, to the dark dens of El Bulli, Surry Hills: 6 tapas to share and Paella!


…And Churros with Dulce de Leche! Needed the Spanish chocolate and honey nougat ice cream from Subsolo; mmmmm…

Then it was time to get up for brunch at the Alliance Francaise Centre for some Parsley soup…

…And Cassoulet (if it had garlic breadcrumbs it would have been the best one I’ve ever tasted).

Finished it with Citron Muelle-Fuille

Then head over to Lunch at:

To have some crumbed lamb brains with a corn fritter and fennel and broad bean salad

Blue Eye on Mussel broth, potato gnocchi and (more) broad beans

Duck confit with beetroot puree, baby spring onions, braised red cabbage

And now I am broke, but happy and full. Stomach can take more, but probably should have cut down on the wine consumption…

SO FULL BUT OH SO GOOD!
